Description
A rich and comforting casserole combining savory ground beef, tender mushrooms, and a creamy cheesy sauce baked to golden perfection—ideal for a cozy family dinner.
Ingredients
1 lb (450g) ground beef
8 oz (225g) mushrooms, sliced
1 small onion, finely chopped
2 cloves garlic, minced
1 cup sour cream or Greek yogurt
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup milk
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper, to taste
2 cups cooked pasta or mashed potatoes (optional, for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant and translucent, about 3 minutes.
- Add ground beef, breaking it apart with a spoon, and cook until browned and no longer pink. Drain excess fat if necessary.
- Stir in sliced mushrooms and cook until softened, about 5 minutes.
- Remove skillet from heat and stir in sour cream, milk, thyme, salt, and pepper until well combined.
- Transfer the beef and mushroom mixture to a baking dish. Sprinkle cheddar and Parmesan evenly over the top.
- Bake uncovered for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
- Let rest for 5 minutes before serving. Enjoy as is or over cooked pasta or mashed potatoes for a heartier meal.
Notes
You can substitute cremini or shiitake mushrooms for a deeper flavor.
Add spinach or diced bell peppers to boost nutrition and freshness.
For a lower-carb option, serve without pasta or mashed potatoes, paired with steamed veggies or salad.
Swap cheddar cheese for mozzarella for a milder cheesy flavor.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Reheat in the oven covered with foil at 350°F (175°C) for about 15 minutes, or microwave.
- Ground turkey or chicken can be used as a leaner meat alternative.
- Greek yogurt is a great substitute for sour cream for a healthier option.
- The dish can be assembled a day ahead and baked later, adding extra cooking time if cold.
- For a dairy-free version, use dairy-free sour cream, cheese, and milk substitutes like almond or oat milk.
