Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
½ cup cream cheese, softened
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 garlic clove, minced
1 tbsp olive oil
1 tsp dried Italian seasoning
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Carefully cut a horizontal pocket into the thickest part of each chicken breast, being careful not to slice all the way through.
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper.
- Spoon the creamy spinach mixture into each chicken breast pocket and use toothpicks if needed to secure the filling.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for 5 minutes, remove the toothpicks, and garnish with chopped parsley before serving.
Notes
You can substitute frozen spinach (thawed and squeezed dry) for fresh spinach.
Try swapping mozzarella for cheddar or add red pepper flakes for heat.
Use pre-shredded cheese blends for convenience.
Sprinkle extra Parmesan on top before baking for a crispier texture.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
Reheat in the oven at 350°F (175°C) for 10–15 minutes or use the microwave in short bursts.
