Ingredients

6 oz cream cheese, softened

Instructions
- Prepare the cheesecake filling by beating cream cheese, powdered sugar, and vanilla extract until smooth. Scoop into 10–12 small mounds and freeze for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and beat until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet ingredients until just combined.
- Gently fold in the finely diced strawberries.
