Ingredients
2 large sweet potatoes (peeled if desired), sliced into 1/4-inch rounds
2–3 tbsp olive oil
2–3 cloves garlic, minced
1 tsp lemon zest
1 tbsp lemon juice

Salt and black pepper, to taste

Instructions
