Ingredients
2 pounds small potatoes such as baby Yukon Gold or red potatoes
1/4 cup olive oil
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian herbs
1/4 teaspoon black pepper
1/4 teaspoon salt or to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and thoroughly dry the potatoes, then cut them into 1-inch pieces. If using smaller potatoes, halve or quarter them evenly.
- In a large mixing bowl, combine olive oil, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, black pepper, and salt. Stir until well mixed.
- Add the prepared potatoes to the bowl and toss until evenly coated with the Parmesan mixture.
- Spread the potatoes in a single layer on a large baking sheet without overcrowding. Use two baking sheets if necessary.
- Bake for 30 to 40 minutes, flipping halfway through, until deep golden brown and crispy on the edges.
