Description

This Crock Pot Huli Huli Chicken is a sweet and savory Hawaiian-inspired slow cooker dish with tender, juicy chicken soaked in a rich, flavorful sauce that balances sweet, tangy, and a touch of heat.


Ingredients

4 boneless, skinless chicken breasts (or thighs)

¾ cup soy sauce (or tamari for gluten-free)

¼ cup ketchup

½ cup brown sugar

¼ cup apple cider vinegar

2 tbsp sesame oil (or vegetable oil)

2 garlic cloves, minced

1 tsp fresh ginger, grated

1 tbsp rice vinegar

1 tsp crushed red pepper flakes (optional for heat)

1 tbsp cornstarch (optional, for thickening)

1 tbsp water (for slurry, optional)


Instructions

  1. Mix soy sauce, ketchup, brown sugar, apple cider vinegar, sesame oil, garlic, ginger, rice vinegar, and red pepper flakes (if using) in a bowl to prepare the sauce.
  2. Place chicken breasts in the Crock Pot and pour the sauce over, stirring to coat the chicken well.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken is fully cooked and tender.
  4. If thicker sauce is desired, mix cornstarch with water to make a slurry and stir it into the sauce; simmer on low for 10-15 minutes to thicken.
  5. Serve chicken over rice, garnished with sesame seeds and sliced green onions.

Notes

Can use chicken thighs for juicier meat.

Substitute tamari for gluten-free version.

Add smoked paprika for a smoky flavor.

Add sliced bell peppers or pineapple chunks during the last hour of cooking for a complete meal.

Store leftovers in an airtight container in the fridge up to 3 days.

Reheat gently on stove or microwave with a splash of water to maintain moisture.

Frozen chicken can be used but cook longer on low (6-8 hours).

Instant Pot option: sauté sauce, then cook chicken on high pressure 10 minutes with natural release.
