Ingredients
1 cup almond butter
1/2 cup dates, pitted and chopped
1/2 cup oats
1/4 cup coconut flour
1 teaspoon vanilla extract
Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, pulse the dates until they form a paste-like consistency.
- Add the almond butter, oats, coconut flour, vanilla extract, and salt to the food processor with the date paste. Blend until everything is well combined.
- Scoop tablespoon-sized portions of dough and roll them into balls, then flatten them slightly with your fingers or a fork.
- Place the cookies onto the prepared baking sheet and bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
If you want to make these cookies even more indulgent, drizzle a little melted dark chocolate on top.
Once cooled, store them in an airtight container at room temperature for up to 4-5 days or freeze for longer storage.
You can experiment with adding chocolate chips, chopped nuts, or dried fruit like cranberries or raisins for extra flavor.
