Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
2 cups grated carrots
1/2 cup chopped walnuts (optional)
1/2 cup raisins (optional)
For the cream cheese frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the grated carrots, walnuts, and raisins (if using).
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the carrot cake bars to cool completely in the pan.
- While the bars are cooling, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar and vanilla extract, and continue to beat until light and fluffy.
- Once the bars are completely cooled, spread the cream cheese frosting over the top.
- Slice into bars and serve.
