Description
These fresh peach fritters are golden and crisp on the outside, soft and fluffy on the inside, and packed with juicy peach flavor. Finished with a simple vanilla glaze, they make the perfect bakery-style treat at home.
Ingredients
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1/3 cup milk
1 egg
1 tsp vanilla extract
1 tbsp melted butter
1 heaping cup chopped fresh peaches (peeled if preferred)
Oil for frying
1 cup powdered sugar (for glaze, optional)
2–3 tbsp milk or cream (for glaze)
1/2 tsp vanilla extract (for glaze)
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, mix the milk, egg, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Gently fold in the chopped fresh peaches.
- Heat about 2 inches of oil in a heavy pot or deep skillet to 350°F (175°C).
- Drop heaping spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
- Fry for 2–3 minutes per side, or until golden brown.
- Transfer fritters to a paper towel-lined plate to drain excess oil.
- For the glaze, whisk together powdered sugar, milk or cream, and vanilla extract until smooth.
- Dip or drizzle the glaze over warm fritters and allow it to set briefly before serving.
Notes
Add a pinch of nutmeg or a tablespoon of finely chopped pecans for extra flavor and texture.
Frozen peaches can be used if thawed and well drained; canned peaches should be thoroughly drained and patted dry.
If fritters turn greasy, ensure oil temperature stays at 350°F.
Store in an airtight container at room temperature for up to 1 day or refrigerate for up to 3 days.
Reheat in a 300°F oven for 8–10 minutes to maintain crispness.
