Description

These fresh peach fritters are golden and crisp on the outside, soft and fluffy on the inside, and packed with juicy peach flavor. Finished with a simple vanilla glaze, they make the perfect bakery-style treat at home.


Ingredients

1 cup all-purpose flour

1/4 cup granulated sugar

1 1/2 tsp baking powder

1/4 tsp cinnamon

1/4 tsp salt

1/3 cup milk

1 egg

1 tsp vanilla extract

1 tbsp melted butter

1 heaping cup chopped fresh peaches (peeled if preferred)

Oil for frying

1 cup powdered sugar (for glaze, optional)

23 tbsp milk or cream (for glaze)

1/2 tsp vanilla extract (for glaze)


Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, mix the milk, egg, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  4. Gently fold in the chopped fresh peaches.
  5. Heat about 2 inches of oil in a heavy pot or deep skillet to 350°F (175°C).
  6. Drop heaping spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry for 2–3 minutes per side, or until golden brown.
  8. Transfer fritters to a paper towel-lined plate to drain excess oil.
  9. For the glaze, whisk together powdered sugar, milk or cream, and vanilla extract until smooth.
  10. Dip or drizzle the glaze over warm fritters and allow it to set briefly before serving.

Notes

Add a pinch of nutmeg or a tablespoon of finely chopped pecans for extra flavor and texture.

Frozen peaches can be used if thawed and well drained; canned peaches should be thoroughly drained and patted dry.

If fritters turn greasy, ensure oil temperature stays at 350°F.

Store in an airtight container at room temperature for up to 1 day or refrigerate for up to 3 days.

Reheat in a 300°F oven for 8–10 minutes to maintain crispness.
