Ingredients
4 cups sweetened shredded coconut
1 can (14 oz) sweetened condensed milk
1 teaspoon vanilla extract
Pinch of salt
1/2 cup dulce de leche (plus more for drizzling)
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt until well combined.
- Using about 2 tablespoons of the mixture, flatten it slightly in your hand and spoon a small amount of dulce de leche into the center.
- Top with a bit more coconut mixture and shape into a mound, sealing the dulce de leche inside.
- Place the shaped macaroons onto the prepared baking sheet.
- Bake for 20 to 25 minutes, or until the tops are golden brown.
- Allow to cool completely, then drizzle with additional dulce de leche.
Notes
Dip the bottoms in melted dark chocolate for an extra decadent treat.
A dash of cinnamon or sea salt adds contrast to the sweetness.
Caramel sauce can be used as a substitute for dulce de leche.
