Description

A cheerful vanilla layer cake topped with fluffy frosting and decorated with colorful Easter Peeps, perfect for spring celebrations and holiday tables.


Ingredients

2 cups all-purpose flour

1 1/2 cups granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1/2 cup butter, softened

3 cups powdered sugar

2 tablespoons heavy whipping cream

1 teaspoon vanilla extract

Easter Bunny Peeps or marshmallow Peeps for decoration


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Add milk, vegetable oil, eggs, and vanilla extract. Beat until smooth.
  4. Divide the batter evenly between prepared pans.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool cakes completely on a wire rack.
  7. Beat softened butter until creamy, then gradually add powdered sugar, cream, and vanilla extract until light and fluffy.
  8. Place one cake layer on a plate, spread frosting on top, then add the second layer.
  9. Frost the top and sides evenly.
  10. Decorate with Easter Bunny Peeps and serve.

Notes

Add pastel sprinkles or tinted frosting for extra decoration.

Mix in lemon zest for a brighter flavor variation.
