Description

This Easy Cajun Chicken and Rice is a bold, flavorful one-pan dish that combines tender Cajun-seasoned chicken with perfectly cooked rice, making it a quick and satisfying meal.


Ingredients

2 chicken breasts, boneless and skinless

1 tablespoon olive oil

1 tablespoon Cajun seasoning

1/2 cup onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1 can (14.5 oz) diced tomatoes, drained

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with Cajun seasoning, salt, and pepper on both sides, then add them to the skillet. Cook for 6-7 minutes per side, or until golden and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add chopped onion and bell pepper, sauté for 4-5 minutes until softened.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Stir in the rice, chicken broth, diced tomatoes, paprika, and cayenne pepper (if using). Bring to a boil, then reduce the heat to low.
  6. Return the chicken to the skillet, placing it on top of the rice. Cover and simmer for 15-20 minutes, or until rice is tender and chicken is fully cooked.
  7. Garnish with fresh parsley and serve hot.

Notes

For added vegetables, try zucchini or spinach.

Substitute shrimp, sausage, or tofu for the chicken if desired.

Adjust the spice level by varying the cayenne pepper or Cajun seasoning blend.

Store leftovers in an airtight container in the fridge for up to 3 days.

If using brown rice, add an extra 1/2 cup of broth and simmer for an additional 10-15 minutes.
