Description

A creamy, cheesy one-pot pasta dish that’s a homemade version of the classic Hamburger Helper — healthier, quick to make, and packed with nostalgic flavor.


Ingredients

1 lb lean ground beef (or ground turkey)

1 small onion, finely chopped

2 cloves garlic, minced

2 cups low-sodium beef broth

1 1/2 cups milk (dairy or unsweetened non-dairy)

2 cups elbow macaroni (uncooked)

1 tablespoon tomato paste

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

Optional: fresh parsley, chopped (for garnish)


Instructions

  1. In a large skillet or pot over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add the chopped onion and garlic, and cook for 2–3 minutes until the onion is soft and translucent.
  3. Stir in tomato paste, paprika, garlic powder, onion powder, salt, and black pepper. Cook for 1 minute.
  4. Add the uncooked macaroni, beef broth, and milk. Stir to coat the pasta.
  5. Bring to a simmer, reduce heat to low, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  6. Remove from heat and stir in shredded cheddar cheese until melted and creamy.
  7. Adjust seasonings if needed, garnish with chopped parsley, and serve hot.

Notes

Use ground turkey or chicken for a lighter version.

Add Worcestershire or hot sauce for extra flavor.

Boost veggies by adding spinach, peas, or bell peppers.

Swap in different cheeses like pepper jack for a twist.
