A creamy, cheesy one-pot pasta dish that’s a homemade version of the classic Hamburger Helper — healthier, quick to make, and packed with nostalgic flavor.
Ingredients
1 lb lean ground beef (or ground turkey)
1 small onion, finely chopped
2 cloves garlic, minced
2 cups low-sodium beef broth
1 1/2 cups milk (dairy or unsweetened non-dairy)
2 cups elbow macaroni (uncooked)
1 tablespoon tomato paste
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
Optional: fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or pot over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add the chopped onion and garlic, and cook for 2–3 minutes until the onion is soft and translucent.
- Stir in tomato paste, paprika, garlic powder, onion powder, salt, and black pepper. Cook for 1 minute.
- Add the uncooked macaroni, beef broth, and milk. Stir to coat the pasta.
- Bring to a simmer, reduce heat to low, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese until melted and creamy.
- Adjust seasonings if needed, garnish with chopped parsley, and serve hot.
Notes
Use ground turkey or chicken for a lighter version.
Add Worcestershire or hot sauce for extra flavor.
Boost veggies by adding spinach, peas, or bell peppers.
Swap in different cheeses like pepper jack for a twist.
Use whole-wheat or gluten-free pasta as needed.
