Ingredients

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into strips

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

4 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup chicken broth

1 cup heavy cream

3/4 cup grated Parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

12 oz (340g) pasta of choice (penne, rigatoni, or fettuccine)

Fresh parsley or basil, for garnish


Instructions

  1. Cook the pasta in salted boiling water according to package directions. Reserve 1/2 cup of the pasta water before draining.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken with salt, pepper, and paprika, then sear in the skillet for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same skillet, sauté the minced garlic for 1 minute until fragrant.
  5. Add the chopped sun-dried tomatoes and cook for another minute.
  6. Pour in chicken broth, scraping up any browned bits from the pan.
  7. Stir in heavy cream, Parmesan cheese, oregano, and thyme. Simmer for 2–3 minutes until slightly thickened.
  8. Return cooked chicken to the skillet and toss to coat in the sauce.
  9. Add cooked pasta to the skillet and mix everything well. Use reserved pasta water as needed to adjust sauce consistency.
  10. Garnish with fresh parsley or basil and serve hot.

Notes

Use rotisserie chicken for a quicker version—just skip the searing step.

Swap chicken for shrimp or sautéed mushrooms for a different protein or vegetarian option.

Add red pepper flakes for a touch of heat.

Stir in spinach at the end for extra color and nutrients.

Pecorino Romano can replace Parmesan for a sharper flavor.
