3 large eggs
2 tbsp milk (or water)
Salt and black pepper, to taste
1 tsp olive oil or butter
1/2 ripe avocado, sliced
2 tbsp shredded cheese (optional)
Fresh herbs (parsley, chives, or cilantro) for garnish
Instructions
- Whisk the eggs, milk, salt, and pepper in a bowl until smooth.
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Pour in the egg mixture and tilt the pan to spread it evenly.
- Once the omelette begins to set, add sliced avocado and cheese (if using) on one side.
- Fold the omelette in half and cook for 1–2 minutes until golden and cooked through.
- Slide onto a plate, garnish with fresh herbs, and serve immediately.
Notes
Use water instead of milk for an even fluffier omelette.
Skip the cheese for a lighter or dairy-free option.
Add diced tomatoes, mushrooms, or red pepper flakes for extra flavor.
Best enjoyed fresh, but can be stored in the fridge for up to 1 day.
To reheat, warm gently in a skillet or microwave for 30–40 seconds.
