Ingredients
2 boneless, skinless chicken breasts
4 cups chicken broth
2 packs ramen noodles (discard seasoning packets)
1 tablespoon vegetable oil
4 cloves garlic, minced
1 tablespoon ginger, grated
1–2 teaspoons chili paste (adjust to heat preference)
1 cup coconut milk or heavy cream
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 green onions, sliced
1 cup baby spinach or bok choy
1 soft-boiled egg (optional)
Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Add garlic and ginger, and sauté until fragrant, about 1 minute.
- Add chicken breasts and sear them until golden on both sides, about 3-4 minutes per side.
- Pour in chicken broth, soy sauce, chili paste, and rice vinegar. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the chicken is cooked through.
- Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the pot.
- Stir in coconut milk or heavy cream and sesame oil, then simmer gently for 3-5 minutes. Adjust seasoning with salt and pepper.
- Meanwhile, cook ramen noodles in a separate pot according to package instructions. Drain and set aside.
- Add spinach or bok choy to the broth and cook until wilted, about 2 minutes.
- To serve, divide the noodles between bowls, ladle the spicy creamy broth and chicken over the top, and garnish with sliced green onions and a soft-boiled egg if desired.
Notes
You can adjust the heat by increasing or decreasing the chili paste.
For a vegetarian option, swap chicken for tofu or other plant-based proteins.
If making ahead, store noodles separately from the broth to prevent sogginess.
