Description

Fiery Chicken Ramen with Creamy Garlic Sauce is a bold and comforting dish that combines tender chicken, a spicy broth, and a creamy garlic sauce to create a flavor-packed bowl of goodness.


Ingredients

2 boneless, skinless chicken breasts

4 cups chicken broth

2 packs ramen noodles (discard seasoning packets)

1 tablespoon vegetable oil

4 cloves garlic, minced

1 tablespoon ginger, grated

12 teaspoons chili paste (adjust to heat preference)

1 cup coconut milk or heavy cream

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 green onions, sliced

1 cup baby spinach or bok choy

1 soft-boiled egg (optional)

Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add garlic and ginger, and sauté until fragrant, about 1 minute.
  2. Add chicken breasts and sear them until golden on both sides, about 3-4 minutes per side.
  3. Pour in chicken broth, soy sauce, chili paste, and rice vinegar. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the chicken is cooked through.
  4. Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the pot.
  5. Stir in coconut milk or heavy cream and sesame oil, then simmer gently for 3-5 minutes. Adjust seasoning with salt and pepper.
  6. Meanwhile, cook ramen noodles in a separate pot according to package instructions. Drain and set aside.
  7. Add spinach or bok choy to the broth and cook until wilted, about 2 minutes.
  8. To serve, divide the noodles between bowls, ladle the spicy creamy broth and chicken over the top, and garnish with sliced green onions and a soft-boiled egg if desired.

Notes

You can adjust the heat by increasing or decreasing the chili paste.

For a vegetarian option, swap chicken for tofu or other plant-based proteins.

If making ahead, store noodles separately from the broth to prevent sogginess.
