Description

Silky and creamy, this classic flan features a rich vanilla custard topped with golden caramel sauce. It’s an elegant yet simple dessert that’s naturally gluten-free and perfect for make-ahead entertaining.


Ingredients

1 cup granulated sugar (for caramel)

1/3 cup water (for caramel)

1 (14-ounce) can sweetened condensed milk

1 (12-ounce) can evaporated milk

3 large eggs

2 large egg yolks

1 tablespoon pure vanilla extract

Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, combine the sugar and water for the caramel. Stir until the sugar dissolves, then let it boil undisturbed until it turns a deep golden brown (about 8–10 minutes).
  3. Immediately pour the caramel into a 9-inch round cake pan or flan dish, swirling to coat the bottom evenly. Set aside to harden.
  4. In a blender, combine the sweetened condensed milk, evaporated milk, eggs, egg yolks, vanilla extract, and salt. Blend until smooth.
  5. Carefully pour the custard mixture over the hardened caramel in the pan.
  6. Place the flan pan inside a large roasting dish. Add hot water to the roasting pan, filling it halfway up the sides of the flan pan to create a water bath.
  7. Transfer to the oven and bake for 50–60 minutes, until the center is just set but slightly jiggly.
  8. Let the flan cool in the water bath for about 1 hour, then refrigerate for at least 4 hours or overnight.
  9. To serve, run a thin knife around the edge of the flan and invert it onto a rimmed serving plate to release the caramel sauce over the top.

Notes

Flan is best made ahead and chilled for several hours or overnight.

Use a traditional flan mold, cake pan, or ramekins for individual servings.

Have your pan ready before making caramel—it sets quickly.

Don’t overbake; the center should still jiggle slightly when done.

Flan should not be frozen; store leftovers in the fridge up to 4 days.
