Description

Ingredients

1 cup mashed sweet potato

2 large eggs

1/2 cup milk

2 tablespoons brown sugar

1 tablespoon maple syrup

3/4 cup all-purpose flour

1 teaspoon cinnamon

1 teaspoon baking powder

1/4 teaspoon salt

Pinch of nutmeg

2 tablespoons melted butter

Butter or oil for cooking

Maple syrup for serving


Instructions

  1. Place the mashed sweet potato in a large bowl. Add the eggs, milk, brown sugar, and maple syrup, then whisk until smooth and well combined.
  2. Add the flour, cinnamon, baking powder, salt, and nutmeg. Stir gently until a smooth batter forms without overmixing.
  3. Pour in the melted butter and mix until fully incorporated.
  4. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/3 cup of batter onto the skillet for each pancake. Cook for 2 to 4 minutes until bubbles appear on the surface.
  6. Flip the pancakes and cook for another 2 to 3 minutes until golden brown and cooked through.
  7. Repeat with the remaining batter and serve warm with maple syrup or desired toppings.

Notes
