Description
A refreshing homemade strawberry soda made with real strawberries and a simple syrup, topped with bubbly club soda for a naturally sweet and vibrant drink.
Ingredients
2 cups fresh strawberries, hulled and chopped
1 cup granulated sugar
1 cup water
1 tablespoon fresh lemon juice
40 oz club soda or carbonated water, chilled
Ice
Fresh strawberries or mint for garnish (optional)
Instructions
- Add the chopped strawberries, sugar, and water to a saucepan over medium heat. Stir occasionally and simmer for 10 to 15 minutes until the strawberries soften and release their juices.
- Gently mash the softened strawberries with a spoon to extract additional flavor.
- Remove the saucepan from the heat and stir in the fresh lemon juice.
- Strain the mixture through a fine mesh strainer into a bowl or jar, pressing the berries to extract as much syrup as possible. Discard the solids.
- Allow the strawberry syrup to cool completely, then refrigerate until chilled.
- To prepare the soda, fill a glass with ice and pour in about 8 ounces of chilled club soda.
- Stir in 4 to 5 tablespoons of the strawberry syrup and adjust sweetness to taste.
- Garnish with fresh strawberries or mint if desired and serve immediately.
Notes
Add a few raspberries while simmering the syrup for a deeper berry flavor.
Simmer a few fresh basil leaves with the strawberries for a subtle herbal twist.
For a citrus variation, add a splash of orange or lime juice along with the lemon juice.
Store strawberry syrup in an airtight container in the refrigerator for up to 1 week.
The syrup can be frozen in ice cube trays for longer storage and easy portioning.
