Description

A refreshing homemade strawberry soda made with real strawberries and a simple syrup, topped with bubbly club soda for a naturally sweet and vibrant drink.

Ingredients

2 cups fresh strawberries, hulled and chopped

1 cup granulated sugar

1 cup water

1 tablespoon fresh lemon juice

40 oz club soda or carbonated water, chilled

Ice

Fresh strawberries or mint for garnish (optional)

Instructions

  1. Add the chopped strawberries, sugar, and water to a saucepan over medium heat. Stir occasionally and simmer for 10 to 15 minutes until the strawberries soften and release their juices.
  2. Gently mash the softened strawberries with a spoon to extract additional flavor.
  3. Remove the saucepan from the heat and stir in the fresh lemon juice.
  4. Strain the mixture through a fine mesh strainer into a bowl or jar, pressing the berries to extract as much syrup as possible. Discard the solids.
  5. Allow the strawberry syrup to cool completely, then refrigerate until chilled.
  6. To prepare the soda, fill a glass with ice and pour in about 8 ounces of chilled club soda.
  7. Stir in 4 to 5 tablespoons of the strawberry syrup and adjust sweetness to taste.
  8. Garnish with fresh strawberries or mint if desired and serve immediately.

Notes

Add a few raspberries while simmering the syrup for a deeper berry flavor.

Simmer a few fresh basil leaves with the strawberries for a subtle herbal twist.

For a citrus variation, add a splash of orange or lime juice along with the lemon juice.

Store strawberry syrup in an airtight container in the refrigerator for up to 1 week.

The syrup can be frozen in ice cube trays for longer storage and easy portioning.
