Ingredients
2 boneless, skinless chicken thighs
1 cup buttermilk
1 teaspoon hot sauce (optional)
1 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Vegetable oil, for frying
2 brioche or sandwich buns
1/2 cup coleslaw mix
2 tablespoons mayonnaise
1 teaspoon apple cider vinegar
4 dill pickle slices
Optional: spicy mayo or your favorite sandwich sauce
Instructions
- In a bowl, mix buttermilk and hot sauce. Add chicken thighs, cover, and refrigerate for at least 1 hour or overnight.
- In a shallow bowl, combine flour, paprika, garlic powder, onion powder, salt, and black pepper.
- Remove chicken from marinade, let excess drip off, and coat thoroughly in the flour mixture. Press to adhere.
- Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken for 4–5 minutes per side until golden and cooked through (internal temperature of 165°F).
- For slaw, mix coleslaw mix with mayonnaise and apple cider vinegar. Season with salt and pepper to taste.
- Lightly toast buns in a skillet or toaster.
- Assemble the sandwich: spread spicy mayo or sauce on the bottom bun, add fried chicken, slaw, pickles, and top with the other bun.
Notes
Marinate the chicken overnight for the best flavor and tenderness.
Let the coated chicken rest before frying for a crispier crust.
Use an oil with a high smoke point like vegetable, canola, or peanut oil.
To reheat, use an oven or air fryer at 375°F (190°C) for 8–10 minutes.
