Description

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 cup milk

1/2 cup fruit jam or preserves (strawberry, raspberry, etc.)

1 cup powdered sugar

12 tablespoons milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until a dough forms.
  5. Divide the dough in half. Roll out one portion of dough between two pieces of parchment paper to about 1/8 inch thickness. Cut the dough into rectangles (approximately 3×4 inches).
  6. Place half of the dough rectangles on a baking sheet lined with parchment paper. Add a teaspoon of fruit jam or preserves to the center of each, then top with the remaining dough rectangles. Press the edges gently with a fork to seal.
  7. Bake the cookies for 10-12 minutes, or until lightly golden around the edges. Allow the cookies to cool completely on a wire rack.
  8. To make the frosting, whisk together powdered sugar and milk until smooth and spreadable. Frost the cooled cookies and top with sprinkles, if desired.

Notes
