Ingredients
2 cups plain Greek yogurt (or any yogurt of choice)
1 tablespoon honey or maple syrup (optional)
1 cup strawberries, chopped
1 cup blueberries
1 cup granola
1/2 banana, sliced
Fresh mint leaves for garnish (optional)
Instructions
- In a bowl, mix the yogurt with honey or maple syrup if desired for extra sweetness.
- Prepare 2 to 4 small glasses or mason jars for assembling the parfaits.
- Spoon a layer of yogurt into the bottom of each glass.
- Add a layer of chopped strawberries and banana slices over the yogurt.
- Top with a layer of granola for crunch.
- Repeat the layers until the glass is full, finishing with additional berries and a sprinkle of granola.
- Garnish with fresh mint leaves if desired.
- Serve immediately for maximum crunch or refrigerate (without granola) for up to a day and add granola just before serving.
Notes
Use coconut, almond, or soy yogurt for a dairy-free version.
Switch up the fruits with seasonal options like raspberries, mango, or blackberries.
Add nut butter, chia seeds, or shredded coconut for extra nutrients and texture.
Store assembled parfaits without granola to prevent sogginess; add granola before eating.
Use thawed and drained frozen fruits if fresh fruit isn’t available.
