Description

These Fruity Pebbles Cookies combine the sweet, crunchy texture of Fruity Pebbles cereal with a soft, chewy cookie base, making for a colorful and flavorful treat.


Ingredients

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups Fruity Pebbles cereal

1/2 cup white chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until fully combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Gently fold in the Fruity Pebbles cereal and white chocolate chips (if using).
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

If your cookies spread too much and become flat, try chilling the dough for 30 minutes before baking to help them hold their shape.

For a longer shelf life, store the cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months.

You can substitute Fruity Pebbles with other cereals like Rice Krispies or Cornflakes for a different flavor and texture.
