Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened

1 large egg
2 teaspoons pure vanilla extract
1/2 teaspoon almond extract (optional)
1/2 cup rainbow sprinkles (jimmies style)
2 tablespoons milk (if needed for softer dough)
Instructions
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 2–3 minutes.
- Beat in the egg, vanilla extract, and almond extract until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Gently fold in the rainbow sprinkles until evenly distributed.
- Cover the dough and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on the prepared baking sheet.
- Bake for 9–11 minutes, until the edges are lightly golden and centers appear slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use jimmies-style sprinkles to prevent color bleeding.
Chilling the dough enhances flavor and prevents spreading.
For thicker cookies, chill the dough longer.
