Ingredients
5 bone-in, skin-on chicken thighs
Salt and black pepper, to taste
1 tablespoon olive oil
1/4 cup unsalted butter
5 cloves garlic, crushed
Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400 °F (200 °C) and position a rack in the center.
- Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
- In an oven-safe skillet, heat the olive oil over medium heat.
- Place the chicken thighs skin-side down and sear for about 5 minutes until golden and crispy.
- Flip the chicken, add the butter, and stir in the crushed garlic once the butter starts to melt. Cook for 30 seconds until fragrant.
- Transfer the skillet to the oven and bake for about 30 minutes, or until the internal temperature reaches 165 °F (74 °C).
- Remove from oven, spoon garlic-butter sauce over the chicken, sprinkle with chopped parsley, and serve warm.
Notes
Add rosemary or thyme to the butter for an aromatic twist.
Include red pepper flakes with the garlic for a spicy kick.
Use skinless chicken thighs for a lighter option, though the skin won’t be crispy.
Add baby potatoes or Brussels sprouts to make it a one-pan meal.
