Ingredients
500 g fresh cod fillets, cut into strips
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
½ tsp smoked paprika
Salt, to taste
Black pepper, to taste
Juice of ½ lime
2 tbsp sweet chili sauce
Fresh cilantro or parsley, for garnish
Lime wedges, for serving
Instructions
- Pat the cod strips dry with paper towels and season evenly with salt, black pepper, and smoked paprika.
- Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, without browning.
- Place the seasoned cod strips in a single layer in the skillet. Cook for 2–3 minutes per side, until golden and flaky.
- In a small bowl, mix the sweet chili sauce with fresh lime juice. Drizzle the sauce over the cooked cod and gently toss to coat evenly.
- Remove from heat, sprinkle with freshly chopped cilantro or parsley, and serve immediately with lime wedges.
Notes
Swap cod with haddock or tilapia if desired.
Add red pepper flakes for extra heat or a drizzle of honey for added sweetness.
Serve with rice, noodles, roasted vegetables, salad, or cauliflower rice for a low-carb option.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheat gently in a skillet over low heat with a splash of water or lime juice to prevent drying.
