Ingredients

2 boneless, skinless chicken breasts, cubed

1 cup long-grain white rice, uncooked

2 cups chicken broth

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, chopped

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large oven-safe skillet or baking dish, heat olive oil over medium heat. Add the cubed chicken breasts and season with salt, pepper, thyme, and oregano. Cook for about 5-7 minutes, or until the chicken is lightly browned.

  3. Add the chopped onion and minced garlic to the skillet. Cook for another 2 minutes, stirring frequently, until the onion softens and the garlic becomes fragrant.

  4. Stir in the uncooked rice and chicken broth. Bring the mixture to a simmer.
