These Garlic Parmesan Chicken Skewers feature tender chicken cubes marinated in a savory blend of garlic, Parmesan, lemon juice, and herbs, then grilled to perfection for a quick and flavorful meal.
Ingredients
2 lbs chicken breast, cut into 1-inch cubes
1/4 cup olive oil
1/4 cup grated Parmesan cheese
4 cloves garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon dried oregano
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Wooden or metal skewers
Instructions
- In a large bowl, mix olive oil, Parmesan cheese, minced garlic, lemon juice, oregano, parsley, salt, and pepper.
- Add the chicken cubes and toss until fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- If using wooden skewers, soak them in water for 10–15 minutes.
- Preheat grill or grill pan to medium-high heat.
- Thread marinated chicken onto skewers evenly.
- Grill for 4–5 minutes per side, or until chicken reaches an internal temperature of 165°F (75°C).
- Let the skewers rest for a couple of minutes before serving.
Notes
Add bell peppers, onions, or cherry tomatoes for variety.
Include red pepper flakes or hot sauce for a spicy kick.
Swap chicken with shrimp for a seafood version.
Store leftovers in the fridge for up to 3 days.
Reheat in a 350°F oven or stovetop to avoid drying out.
