Description

These Garlic Parmesan Chicken Skewers feature tender chicken cubes marinated in a savory blend of garlic, Parmesan, lemon juice, and herbs, then grilled to perfection for a quick and flavorful meal.


Ingredients

2 lbs chicken breast, cut into 1-inch cubes

1/4 cup olive oil

1/4 cup grated Parmesan cheese

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon dried oregano

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Wooden or metal skewers


Instructions

  1. In a large bowl, mix olive oil, Parmesan cheese, minced garlic, lemon juice, oregano, parsley, salt, and pepper.
  2. Add the chicken cubes and toss until fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. If using wooden skewers, soak them in water for 10–15 minutes.
  4. Preheat grill or grill pan to medium-high heat.
  5. Thread marinated chicken onto skewers evenly.
  6. Grill for 4–5 minutes per side, or until chicken reaches an internal temperature of 165°F (75°C).
  7. Let the skewers rest for a couple of minutes before serving.

Notes

Add bell peppers, onions, or cherry tomatoes for variety.

Include red pepper flakes or hot sauce for a spicy kick.

Swap chicken with shrimp for a seafood version.

Store leftovers in the fridge for up to 3 days.
