Ingredients
2 pounds baby potatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, toss the halved potatoes with olive oil, garlic, salt, pepper, paprika, oregano, and Parmesan cheese until evenly coated.
- Spread the potatoes out on the prepared baking sheet in a single layer, cut side down.
- Roast for 25 to 30 minutes, or until golden brown and crispy on the edges and fork-tender in the center.
- Remove from the oven and sprinkle with fresh parsley, if using.
- Serve hot as a side dish or on their own.
