Ingredients
500 g (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup grated Parmesan cheese
1 cup breadcrumbs (panko preferred)
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp black pepper
1/2 tsp salt
2 large eggs
2 tbsp milk
Olive oil spray or 2 tbsp olive oil (for baking or frying)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease with olive oil spray.
- In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, paprika, oregano, salt, and black pepper.
- In another bowl, whisk together eggs and milk until smooth.
- Dip each chicken piece into the egg mixture, letting excess drip off, then coat thoroughly in the Parmesan breadcrumb mixture, pressing firmly to adhere.
- For baking: Arrange coated chicken on the prepared baking sheet, lightly spray with olive oil, and bake for 20–25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
- For pan-frying: Heat olive oil in a skillet over medium heat and cook chicken in batches for 3–4 minutes per side until golden brown and fully cooked.
- Serve warm with your favorite dipping sauces.
Notes
Add 1/4 tsp chili flakes for a spicy kick.
Mix chopped fresh parsley into the coating for added freshness.
Squeeze fresh lemon juice over before serving for brightness.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
