Description

Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

2 large tomatoes, sliced

8 ounces fresh mozzarella, sliced

1 cup fresh basil leaves

2 tablespoons balsamic glaze (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried Italian herbs (optional)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season both sides generously with salt, pepper, garlic, and Italian herbs if using.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes.
  4. Top each chicken breast with slices of fresh tomato and mozzarella. Close the grill lid for 1-2 minutes to allow the cheese to slightly melt.
  5. Remove the chicken from the grill and garnish with fresh basil leaves.
  6. Drizzle balsamic glaze over the chicken and serve immediately.

Substitute fresh mozzarella with provolone or mild mozzarella string cheese if unavailable.
