Description
A refreshing summer salad with grilled peaches, creamy burrata cheese, and fluffy couscous, dressed in a zesty lemon vinaigrette. A perfect balance of sweet, savory, and creamy flavors.
Ingredients
1 cup couscous
1 cup boiling water
3 ripe peaches, halved and pitted
2 tablespoons olive oil, divided
Salt and pepper, to taste
1 ball burrata cheese (about 8 oz)
1/4 cup fresh basil leaves, torn
2 tablespoons lemon juice
1 teaspoon honey or maple syrup
1/4 cup toasted pine nuts (optional)
Mixed greens or arugula (optional, for serving)
Instructions
- Prepare couscous by placing it in a large bowl and pouring boiling water over it. Cover and let it sit for 5 minutes, then fluff with a fork.
- Preheat grill or grill pan to medium-high heat. Brush peach halves with 1 tablespoon olive oil and season lightly with salt and pepper.
- Grill peaches for about 3-4 minutes per side, until grill marks appear and peaches are slightly softened. Remove from grill and let cool slightly, then slice.
- In a small bowl, whisk together remaining 1 tablespoon olive oil, lemon juice, honey, salt, and pepper to make the dressing.
- Toss the fluffed couscous with the dressing and basil leaves.
- Gently fold in grilled peach slices and transfer the mixture to a serving bowl or plate.
- Tear burrata cheese into chunks and arrange on top of the salad.
- Sprinkle toasted pine nuts over the salad if using, and serve immediately with mixed greens or arugula if desired.
Notes
Substitute couscous with quinoa, farro, or barley for a different texture and flavor.
For a vegan option, replace burrata cheese with a dairy-free alternative like cashew cheese or tofu-based options.
Grilled peaches can be replaced with nectarines, plums, or figs.
