Ingredients
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 packet enchilada seasoning mix (or homemade seasoning)
1/2 cup beef broth
10 corn tortillas
2 cups red enchilada sauce
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup chopped cilantro (for garnish)
Salt and pepper to taste
1 tablespoon olive oil (for frying tortillas)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Add the chopped onion and garlic to the skillet and cook for 2-3 minutes until softened. Stir in the enchilada seasoning and beef broth, and cook for an additional 5 minutes. Season with salt and pepper to taste.
- In a separate pan, heat the corn tortillas over low heat to soften them. You can lightly fry them in oil for a few seconds per side to make them more pliable and flavorful.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Roll a spoonful of the ground beef mixture into each tortilla and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the shredded cheeses, spreading evenly.
- Bake in the oven for 20-25 minutes, or until the cheese is bubbly and slightly golden.
- Remove from the oven, garnish with fresh chopped cilantro, and serve hot.
Notes
Leftover enchiladas can be stored in an airtight container in the refrigerator for up to 3-4 days.
To reheat, place the enchiladas in an oven-safe dish and bake at 350°F (175°C) for about 10-15 minutes, or until heated through. Alternatively, microwave individual servings for 1-2 minutes.
For a lighter version, swap the ground beef for beans or roasted vegetables like bell peppers, zucchini, and mushrooms.
For a spicier version, add diced jalapeños or a dash of chili powder to the beef mixture.
