Ingredients

1 tablespoon avocado oil or olive oil

1 lb ground turkey

1 small yellow onion, chopped

3 cloves garlic, minced

1 small butternut squash, peeled and diced (about 3 cups)

1 bunch rainbow chard, stems removed and leaves chopped

1/2 teaspoon sea salt (or to taste)

1/4 teaspoon ground black pepper

1/2 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh lemon juice (optional, for brightness)


Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add chopped onion and cook for 3–4 minutes, stirring often, until softened.
  3. Stir in garlic and cook for another 30 seconds.
  4. Add ground turkey, break it up with a spatula, and cook for 6–8 minutes until browned and fully cooked through.
  5. Season with salt, pepper, smoked paprika, cumin, and crushed red pepper flakes (if using).
  6. Stir in the diced butternut squash and mix well.
  7. Cover and cook for 10–12 minutes, stirring occasionally, until the squash is fork-tender.
  8. Add the chopped rainbow chard and cook for 2–3 minutes until wilted.
  9. Finish with a splash of lemon juice (if using), and serve hot.

Notes

Swap ground turkey with ground chicken or beef for variation.

Use spinach or kale if rainbow chard is unavailable.

Add fresh herbs like parsley or cilantro before serving for extra flavor.

Serve over quinoa or cauliflower rice to make it more filling.

Store leftovers in the fridge for up to 4 days; reheat in a skillet or microwave.
