Ingredients
1 lb ground beef
1 small onion (diced)
2 cloves garlic (minced)
4 cups beef broth
1 can (14.5 oz) diced tomatoes
1 cup tomato sauce
2 carrots (diced)
2 celery stalks (diced)
1 small potato (diced)
1 cup frozen corn or green beans
1 teaspoon Worcestershire sauce
1 teaspoon Italian seasoning
½ teaspoon black pepper
Instructions
- In a large pot, brown the ground beef over medium heat. Once browned, drain any excess fat.
- Add the diced onion and minced garlic to the pot, and cook for about 2 minutes, until softened and fragrant.
- Stir in the beef broth, diced tomatoes, tomato sauce, carrots, celery, potato, Worcestershire sauce, and seasonings. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the frozen corn or green beans and cook for an additional 5 minutes.
- Garnish with fresh parsley and serve hot. For an extra hearty meal, serve with crusty bread or crackers on the side.
Notes
This soup can be customized with additional vegetables like peas, zucchini, or bell peppers.
For a spicy version, add red pepper flakes or a diced jalapeño pepper.
Ground turkey or chicken can be used as a leaner alternative to ground beef.
