Description

A light, creamy, and tropical dessert combining pineapple, coconut, and marshmallows into a fluffy, sweet treat that requires no baking and is perfect for warm days or casual gatherings.

Ingredients

1 can (20 oz) crushed pineapple, drained

1 cup sweetened shredded coconut

1 cup mini marshmallows

1 container (8 oz) whipped topping (like Cool Whip)

1 cup sweetened condensed milk

½ cup chopped pecans (optional)

½ tsp vanilla extract

Instructions

  1. In a large bowl, mix together the drained crushed pineapple, shredded coconut, mini marshmallows, sweetened condensed milk, chopped pecans (if using), and vanilla extract until well combined.
  2. Gently fold in the whipped topping, being careful not to deflate the fluffiness, until everything is evenly mixed.
  3. Cover the bowl and refrigerate the mixture for at least 1 hour to let the flavors meld and the fluff set.
  4. Serve chilled, optionally garnished with extra coconut or pecans for added texture and visual appeal.

Notes

Pecans are optional and can be replaced with toasted macadamia nuts for a tropical twist.

Use fresh pineapple if preferred, but drain well to avoid excess moisture.

For a lighter version, use low-fat whipped topping and reduce sweetened condensed milk slightly.

Add a splash of fresh lime juice to brighten the flavors.

Store leftovers covered in the refrigerator for up to 3 days; best served chilled.

Can add other fruits like mango or mandarin oranges, adjusting sweetness accordingly.
