Description

This healthy baked brownie oatmeal combines the indulgence of a chocolatey brownie with the wholesome goodness of oatmeal. It’s a delicious and nutritious treat that can be enjoyed as breakfast or dessert.


Ingredients

2 cups rolled oats

1/2 cup unsweetened cocoa powder

1/4 cup maple syrup or honey

2 large eggs

1 cup almond milk (or any milk of choice)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup mini chocolate chips (optional)

1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together the eggs, maple syrup, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is combined.
  5. If you like, fold in mini chocolate chips and chopped walnuts for added texture and flavor.
  6. Pour the mixture into the prepared baking dish, spreading it out evenly.
  7. Bake for 30-35 minutes or until the top is set and a toothpick inserted into the center comes out clean.
  8. Allow the oatmeal to cool slightly before slicing it into squares and serving.

Notes

For a vegan option, use flax eggs and plant-based milk.

This recipe is naturally gluten-free with certified gluten-free oats.

Feel free to swap the sweetener to honey, agave, or any of your choice.
