Ingredients

1 cup canned pumpkin puree

1/4 cup natural peanut butter or almond butter

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 cup whole wheat flour or oat flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup raisins or chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, peanut butter, maple syrup, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the oats, flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in raisins or chocolate chips if you’re using them.
  5. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, flattening each slightly with the back of a spoon.
  6. Bake for 12-15 minutes or until the edges are golden and the cookies are set.
  7. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
