Ingredients
4 tablespoons unsalted butter
1 medium onion, diced
4 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken or vegetable broth
2 cups whole milk
5 cups russet potatoes, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
2 cups shredded sharp cheddar cheese
1/2 cup sour cream
2 tablespoons chopped fresh parsley (optional, for garnish)
Crumbled bacon (optional, for topping)
Green onions (optional, for topping)
Instructions
- Melt butter in a large soup pot or Dutch oven over medium heat.
- Add diced onions and cook until soft and translucent, about 5–6 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Whisk in the flour to create a roux and cook for 2 minutes to eliminate the raw taste.
- Slowly whisk in the broth, followed by the milk, stirring constantly to prevent lumps.
- Add the diced potatoes, thyme, rosemary, salt, and pepper.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, until potatoes are fork-tender.
- Partially mash the soup or use an immersion blender to achieve a thicker consistency, if desired.
- Stir in shredded cheddar cheese and sour cream until melted and smooth.
- Adjust seasoning to taste and serve hot, garnished with parsley, bacon, and green onions if using.
Notes
Use Yukon Gold potatoes for a buttery flavor variation.
Smoked cheddar adds a deeper, smoky twist.
For a vegetarian version, use vegetable broth and skip the bacon topping.
