Description

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup sour cream

1/2 cup sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup raspberry puree (fresh or frozen raspberries blended)

2 tablespoons sugar (for raspberry topping)


Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9×9-inch baking dish with parchment paper or lightly grease it.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated and the mixture holds together when pressed. Press the mixture into the bottom of the prepared dish to form an even crust.
  3. In a separate large bowl, beat the cream cheese, sour cream, and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
  4. Pour the cream cheese mixture over the crust in the baking dish and smooth the top with a spatula.
