1/2 cup heavy cream

1/2 cup fresh strawberries, finely chopped

1/4 cup strawberry jam

1/4 cup powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or a bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
  4. Beat in the sour cream, eggs, vanilla extract, and almond extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Slowly incorporate the heavy cream into the batter, followed by the chopped strawberries and strawberry jam. Stir until evenly distributed.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
