Description

A silky, melt-in-your-mouth Greek-inspired fudge made with just tahini and honey. This naturally gluten-free treat is rich, nutty, and perfectly sweet with only two simple ingredients.


Ingredients

1 cup tahini (well-stirred, smooth and runny)

1/2 cup pure honey


Instructions

  1. Line a small loaf pan or square dish with parchment paper, leaving overhang for easy removal.
  2. In a small saucepan, gently warm the honey over low heat until thin and slightly bubbly, without boiling.
  3. Remove from heat and immediately stir in the tahini.
  4. Mix continuously until smooth, fully combined, and slightly thickened.
  5. Pour the mixture into the prepared pan and spread evenly with a spatula.
  6. Refrigerate for 1–2 hours, or until firm and fully set.
  7. Lift out using the parchment paper and slice into 12 squares or rectangles.

Notes

Add a pinch of sea salt for a sweet-salty contrast.

Stir in chopped pistachios or sesame seeds for extra texture.

Use toasted tahini for a deeper, nuttier flavor.

Add a splash of vanilla extract or a pinch of cinnamon for warmth.

Store in an airtight container in the refrigerator for up to 1 week.

Freeze for longer storage and thaw in the refrigerator before serving.

If fudge does not set properly, ensure the honey was warmed enough and the tahini was well stirred.
