Description
This Hot Reuben Dip is a creamy, cheesy appetizer that combines the classic flavors of a Reuben sandwich in a warm dip. It’s perfect for sharing at parties and gatherings.
Ingredients
8 oz (225g) cream cheese, softened
1/2 cup sour cream
1/2 cup Thousand Island dressing
1 1/2 cups shredded Swiss cheese (or a blend of Swiss & mozzarella)
1 cup cooked corned beef, chopped or shredded
1 cup sauerkraut, drained well and squeezed dry
Optional: 1/4 teaspoon caraway seeds
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a small baking dish or a 9-inch pie plate.
- In a medium bowl, mix together the cream cheese, sour cream, and Thousand Island dressing until smooth.
- Stir in the chopped or shredded corned beef, sauerkraut, and 1 cup of Swiss cheese. If you’re using caraway seeds, add them in as well.
- Spread the mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of cheese on top.
- Bake uncovered for 20–25 minutes, or until the dip is hot and bubbly.
- Serve warm with rye crackers, toasted baguette slices, pretzel chips, or tortilla chips.
Notes
This recipe serves 8–10 people as an appetizer.
You can make it ahead of time and store it in the fridge, then bake or reheat it when ready to serve.
If you prefer a lighter version, use light sour cream and Neufchâtel cheese instead of cream cheese.
If you want a spicier version, add horseradish or hot sauce to the dip.
This dip can also be made in a slow cooker on LOW for 1–2 hours.
