23 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the yogurt, milk, lemon juice, lemon zest, and vanilla extract until the mixture is smooth.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
