Description

Juicy Whole Peach Mochi is a soft, chewy Japanese-inspired dessert made with sweet ripe peach halves wrapped in tender mochi dough. This handheld treat is naturally gluten-free and dairy-free, perfect for a refreshing summer bite.


Ingredients

2 large ripe peaches

1 cup glutinous rice flour (mochiko flour)

¼ cup granulated sugar

1 cup water

½ cup cornstarch (for dusting)


Instructions

  1. Bring a medium pot of water to a boil and score a small “X” at the bottom of each peach.
  2. Blanch peaches in boiling water for about 1 minute, then transfer them to a bowl of cold water to cool.
  3. Peel the peaches, cut them in half, and remove the pits.
  4. In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth.
  5. Cover the bowl with a damp paper towel and microwave on high for 1 minute. Stir, then continue microwaving in 1-minute intervals (stirring each time) for a total of 3 minutes until the dough is thick and sticky. Let it cool slightly.
  6. Generously dust a surface with cornstarch, turn out the mochi dough, and dust the top as well.
  7. Roll the dough into a circle about 1/6-inch thick and cut it into 4 equal pieces.
  8. Place one peach half in the center of each dough piece and pull the edges up to seal around the peach.
  9. Dust the outside with more cornstarch and place seam-side down.
  10. Repeat with the remaining dough and peach halves, then serve fresh.

Notes

Use plenty of cornstarch to prevent the mochi from sticking to your hands.

Best enjoyed the same day, but can be stored in the fridge for up to 24 hours.

Try adding red bean paste or whipped coconut cream for a variation.

Freestone peaches are easier to work with than clingstone varieties.

You can steam the mochi dough instead of using the microwave (15–20 minutes).
