Description

These Lemon Basil Salmon Rolls are a delightful and healthy way to enjoy salmon. Packed with fresh basil, tangy lemon, and a creamy filling, they are both light and flavorful.


Ingredients

4 salmon fillets, skinless

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon lemon zest

1/4 cup fresh basil, chopped

2 tablespoons cream cheese, softened

1/4 teaspoon garlic powder

Salt and pepper to taste

1/4 cup breadcrumbs (optional)

Fresh basil leaves for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle the olive oil and lemon juice over the salmon fillets. Sprinkle with lemon zest, garlic powder, salt, and pepper.
  4. In a small bowl, mix the cream cheese with chopped fresh basil until well combined.
  5. Spread a generous amount of the basil cream cheese mixture over the top of each salmon fillet.
  6. Roll up each salmon fillet tightly and secure with toothpicks.
  7. Optionally, sprinkle breadcrumbs on top for a bit of crunch.
  8. Bake the salmon rolls in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Garnish with fresh basil leaves before serving.

Notes

For a lighter alternative to cream cheese, use Greek yogurt or ricotta cheese.

Frozen salmon fillets can be used, but thaw them completely before cooking.

Breadcrumbs are optional; omit or use gluten-free breadcrumbs for a gluten-free version.

Prepare the salmon rolls up to a day ahead and refrigerate until ready to bake.
