Description

A quick and elegant toast topped with creamy lemon-infused ricotta, fresh berries, and a drizzle of honey. Perfect for a light, refreshing breakfast or brunch.

Ingredients

2 slices whole grain or sourdough bread

1/2 cup ricotta cheese

1 teaspoon lemon zest

1 teaspoon lemon juice

1 teaspoon honey

1/2 cup mixed fresh berries

1 teaspoon honey for drizzling

Fresh mint leaves for garnish (optional)

Instructions

  1. Toast the bread slices in a toaster or skillet until golden and crisp.
  2. In a small bowl, mix the ricotta cheese, lemon zest, lemon juice, and honey until smooth and creamy.
  3. Spread the lemon ricotta mixture evenly over each slice of toasted bread.
  4. Top with fresh berries, distributing them evenly.
  5. Drizzle honey over the berries.
  6. Garnish with fresh mint leaves if desired and serve immediately.

Notes

Use any combination of strawberries, blueberries, raspberries, or blackberries.

Maple syrup can be used instead of honey for a different sweetness.

Add chopped nuts, granola, or chia seeds for extra texture.

Store ricotta mixture in an airtight container in the refrigerator for up to 2 days.

Assemble just before serving to prevent soggy toast.
