Ingredients
1 cup all-purpose flour
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1/2 teaspoon vanilla extract
1/4 cup powdered sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, lemon zest, lemon juice, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the brownies cool completely in the pan.
- Once cooled, dust the top with powdered sugar before cutting into squares.
Notes
For a stronger lemon flavor, add more lemon zest or a bit of lemon extract in addition to the lemon juice.
If making gluten-free, substitute all-purpose flour with a gluten-free blend and ensure the baking powder is gluten-free.
To store, keep in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
