Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar, plus extra for topping
1 large egg
2 teaspoons vanilla extract
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, lemon zest, and lemon juice until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently press each dough ball down with the back of a spoon or your fingers, slightly flattening them.
- Sprinkle a little extra granulated sugar on top of each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown and the cookies are set in the center.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, mix in a couple of tablespoons of cream cheese to the dough.
