Description

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar, plus extra for topping

1 large egg

2 teaspoons vanilla extract

2 teaspoons lemon zest

2 tablespoons fresh lemon juice

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, lemon zest, and lemon juice until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently press each dough ball down with the back of a spoon or your fingers, slightly flattening them.
  7. Sprinkle a little extra granulated sugar on top of each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the cookies are set in the center.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, mix in a couple of tablespoons of cream cheese to the dough.

You can substitute lemon zest and juice with lime or orange for a different citrus twist.

To make it more indulgent, add white or dark chocolate chips.

For a gluten-free option, use a gluten-free flour blend instead of all-purpose flour.
