Description
These Lemon Ricotta Mousse Cups are a light and creamy no-bake dessert with bright citrus flavor and a smooth, airy texture. Topped with fresh berries and mint, they make an elegant yet effortless treat for any occasion.
Ingredients
1 cup (250 g) full-fat ricotta cheese, drained if watery
1/2 cup (120 ml) heavy whipping cream
1/4 cup (60 ml) fresh lemon juice
1/4 cup (30 g) powdered sugar
1 teaspoon vanilla extract
Zest of 1 lemon
Fresh berries, for garnish (raspberries, blueberries, or sliced strawberries)
Fresh mint leaves, for garnish
Instructions
- In a large bowl, combine the ricotta, fresh lemon juice, and powdered sugar. Add the vanilla extract and lemon zest, then whisk until completely smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form, being careful not to overwhip.
- Gently fold one-third of the whipped cream into the ricotta mixture to lighten it. Fold in the remaining whipped cream until the mousse is uniform and fluffy.
- Spoon or pipe the mousse into individual serving cups and smooth the tops.
- Refrigerate for at least 2 hours, or until chilled and set.
- Just before serving, top with fresh berries and mint leaves.
Notes
For a different sweetness profile, substitute honey for powdered sugar.
Add crushed graham crackers or biscotti at the bottom for extra texture.
Orange zest can be added for a more intense citrus flavor.
Store covered in the refrigerator for up to 3 days; add garnishes just before serving.
If overly firm after chilling, let sit at room temperature for 10 minutes before serving.
