Description

These Lemon Ricotta Mousse Cups are a light and creamy no-bake dessert with bright citrus flavor and a smooth, airy texture. Topped with fresh berries and mint, they make an elegant yet effortless treat for any occasion.


Ingredients

1 cup (250 g) full-fat ricotta cheese, drained if watery

1/2 cup (120 ml) heavy whipping cream

1/4 cup (60 ml) fresh lemon juice

1/4 cup (30 g) powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon

Fresh berries, for garnish (raspberries, blueberries, or sliced strawberries)

Fresh mint leaves, for garnish


Instructions

  1. In a large bowl, combine the ricotta, fresh lemon juice, and powdered sugar. Add the vanilla extract and lemon zest, then whisk until completely smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form, being careful not to overwhip.
  3. Gently fold one-third of the whipped cream into the ricotta mixture to lighten it. Fold in the remaining whipped cream until the mousse is uniform and fluffy.
  4. Spoon or pipe the mousse into individual serving cups and smooth the tops.
  5. Refrigerate for at least 2 hours, or until chilled and set.
  6. Just before serving, top with fresh berries and mint leaves.

Notes

For a different sweetness profile, substitute honey for powdered sugar.

Add crushed graham crackers or biscotti at the bottom for extra texture.

Orange zest can be added for a more intense citrus flavor.

Store covered in the refrigerator for up to 3 days; add garnishes just before serving.

If overly firm after chilling, let sit at room temperature for 10 minutes before serving.
